These Spiced Chai Latte Muffins are what happens when your favourite café drink turns into a proper “grab-and-go” bake. Light, fluffy, and packed with warming chai spice, they’re perfect for busy mornings, office snack tables, meeting-room spreads, or a mid-afternoon treat that feels a bit more premium than the usual.

  • 250g plain flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp Drink Me Chai Spiced Chai Latte powder
  • 1 tsp ground cinnamon (optional, for extra spice)
  • 120g light brown sugar
  • 2 large eggs
  • 120ml vegetable oil (or melted butter)
  • 200ml milk (dairy or plant-based)
  • 1 tsp vanilla extract

How to Make It

Soft, fluffy muffins in under 30 minutes — perfect for workplaces and café counters.

  1. Preheat and prep

    Preheat your oven to 180°C (160°C fan) / 350°F and line a 12-hole muffin tin with paper cases.

  2. Mix the dry ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, salt, Drink Me Chai powder, and cinnamon.

  3. Mix the wet ingredients

    In a separate bowl, whisk the sugar, eggs, oil, milk, and vanilla until smooth.

  4. Combine (don’t overmix)

    Gently fold the wet ingredients into the dry ingredients until just combined. A slightly lumpy batter makes the best muffins.

  5. Fill the cases

    Spoon the batter evenly into muffin cases, filling each about three-quarters full.

  6. Bake until golden

    Bake for 18–22 minutes until golden brown and a skewer comes out clean.

  7. Cool and finish

    Leave to cool on a wire rack. Finish with cinnamon sugar or a drizzle of icing for an extra-indulgent touch.
